Ingredients for about 8 muffins

485 g flour 00
12o ml seed oil
180g sugar
200g cottage cheese
6 eggs
1 packet of baking powder
1 tablespoon of instant coffee

Ricotta and coffee cream

750 g well-dried cow’s milk ricotta
100g sugar
50 g cold milk from the fridge
150 ml coffee sweetened to taste

Preparation of the whole ricotta cake with coffee

To make this delicious sprint recipe, first prepare the dough, start by pouring the ricotta into a bowl, work it with a whisk, gradually adding the sugar and instant coffee. Then add the eggs one by one and mix well to make the mixture light and fluffy. Continue by incorporating the oil, the sifted baking powder and flour and the vanilla pod seeds. Stir vigorously until the mixture is smooth, fluffy and homogeneous.


Pour the mixture into a previously greased and floured mold, level the surface and bake the cake in a preheated oven at 180 degrees for about 30/35 minutes. After the indicated cooking time, take it out of the oven and let it cool. Meanwhile, prepare the coffee and let it cool.

In a bowl, pour the well-drained ricotta, then add the sugar and the cold milk. Whisk everything for a few minutes with a whisk, obtaining a thick and homogeneous cream, add the coffee and continue whisking for another minute. And here is the coffee ricotta mousse.
