  1. Chop the onion and sauté it in a pan with oil. Once browned, add the rice and toast it for a few minutes.

  2. Add the white wine, let it evaporate and start pouring the boiling broth, one ladleful at a time.

  3. Meanwhile, cut the radicchio into strips and, 5-6 minutes after the rice has finished cooking, add it to the pan, then season with salt and pepper and add a little broth.

  4. Once the rice is cooked, remove the pan from the heat, add the parmesan and stracchino. Stir well, let stand 5 minutes and serve hot.

Risotto with stracchino and radicchio, preservation

By its very nature, risotto works best when fresh, that is, freshly prepared. If it should stay, however, it can be stored in the refrigerator, inside an airtight container. Here it can rest for a few days, but it must be heated just before serving, possibly adding a little broth to avoid the sticky effect. It is not recommended to freeze it instead as thawed rice can change in consistency and become unpleasant to the palate.
