In this suggestive place, a “top” restaurant could not be missing, entrusted to the young and emerging executive chef Francesco Carrieri. Born in Martina Franca (Ta), after graduating from the hotel school of Castellana Grotte, he began his first culinary experience in the tourist villages of Puglia, then landed in prestigious structures: the starred old post office in Palo Laziale under the direction of Michelino Gioia, the Grand Hotel Savoia in Cortina d’Ampezzo, theHotel Hermitage Relais & Châteaux in Cervinia.

It was Tuscany – where Carrieri brought back the memories of his childhood: the smell of bread baked in the countryside, homemade pasta and the tasty products of his land – that influenced him 360°, because he his region is rich in all the best of Italian cuisine: great wines and great oils, exceptional meats and fish with a network of local suppliers that guarantees quality and freshness.
The taste of tradition
The restaurant menu of course gives plenty of room for fish, but 40% of it is meat because, comments Carrieri, “Fiorentina is sacred”. An emblematic dish of the restaurant and always on the menu, it isThe Caldaro Torre d’Argento‘. “A Tuscan fish soup whose name derives from the restaurant of our hotel – emphasizes Carrieri – A mixture of langoustines, prawns, squid, mussels, clams, cuttlefish, octopus and other catches of the day. It is a dish of ancient tradition, typical of the Argentario fishermen, who prepared it and ate it while sailing while the nets were being laid. Caldaro is the name of the large pot in which the fresh catch of the day was cooked instantly, often directly on the rocks”.

Always with a view to respecting the wishes of customers, the catering services are diversified and extensive: breakfast is served from 7:30 a.m. to 10:30 a.m., there is a new Bistrot and a card for the swimming pool, there is a light lunch with daily specials and in the afternoon a snack menu with hot dishes is also available. Room service can be requested until 10:30 p.m. Of course, no problem for vegetarians, vegans and celiacs, even in the pastries. The card also includes two tasting menu according to the chef, one of 5 and one of 7 dishes.
