Bees are essential for humans, we should have learned that by now. How we should have learned that they are threatened by various causes, climate change, pesticides, diseases, pests, predators and toxic clouds. We decided to try to tell what bees do and what beekeepers do to take care of them.

We will follow the life cycle of these precious animals for an entire year with the help of Federico Tesser, beekeeper who produces organic honey with his company Fonte Incantata.

HONEY TO GLAZE GRILLED MEAT (AND PEACHES)

Each type of honey can be used for different preparations. Thanks to two grilled friends (Stefano Barbazza and Mattia Magni), we experimented with three types of recipes, using three different types of honey to glaze pork ribs, chicken wings and grilled peaches, with indirect cooking.

CHESTNUT HONEY FOR CHICKEN WINGS

Ingredients for the marinade:
3 tablespoons plain yogurt
1 tablespoon of acacia honey
2 teaspoons sweet paprika
A pinch of salt
Pepper

The wings are marinated with the ingredients listed above, then placed in a freezer bag in the refrigerator and left overnight. Once out of the refrigerator, the excess marinade is removed by dabbing with absorbent paper. Before indirect cooking at 180 degrees for 35 minutes, the wings are brushed with chestnut honey which gives a strong but delicate flavor to the chicken.

ACACIA HONEY FOR BBQ RIBS

Ingredients for the “friction”:
To taste salt, pepper, paprika, garlic, onion, brown sugar

Before “rubbing” the ribs (i.e. “rubbing, dry massaging, sprinkling the meat with a mixture of spices and flavorings to flavor it before cooking) they must be cleaned of excess fat and pleura. Acacia honey can be used as a binding agent for spices. After cleaning and “rubbing” the treatment, proceed to indirect cooking for 4 hours at 110/120 degrees. end, pour 3 parts of BBQ sauce and 2 parts of acacia honey into a bowl, mix and brush the ribs, increasing the temperature of the grill to 150/160 degrees for 15/20 minutes until the sauce appears like a shiny lacquer.The honey, used as a sticking agent in the preparation phase and mixed with the glaze in the final cooking phase, gives a savory flavor to the already very good taste of the BBQ ribs, adding bitter and delicate hints.

Homemade “Nutella” with honey

LIME HONEY FOR CARAMELIZED PEACHES

Ingredients:
4 peaches
50g linden honey
Maple syrup to taste
40g brown sugar
Lemon juice to taste

Cut the peaches and arrange them in an aluminum mold, then sprinkle generously with honey, sugar, maple syrup and lemon. They are cooked (always in indirect cooking) at 180/200° for 20 minutes then served lukewarm, possibly accompanied by a scoop of ice cream: an easy dessert to make, with simple and delicious products.
